Corn has a slightly sweet and dairy (butter or milk) flavor. Its flour provides a light texture, perfect for making breads, cakes and other baked goods. Substituting 20% of wheat flour for corn flour reduces heat transfer to the center of the dough and water loss that take place during baking.
Corn contains soluble and insoluble fiber, which are associated with several health benefits. It is also a source of B vitamins, as well as several minerals such as zinc, magnesium, copper, iron and manganese.
Corn is a gluten-free grain. It is therefore a tasty and nutritious alternative for gluten-free baked goods or pastries. In addition, corn is considered to be a cereal low in FODMAP (Fermentable by colonic bacteria Oligosaccharides, Disaccharides, Monosaccharides and Polyols).
