    The lentil is the oldest known edible legume. Canada is now the world’s largest producer and exporter of lentils. The most widely grown varieties are large green lentils and red lentils.

    Lentils can be used in recipes for breads, cakes, muffins, cookies, granola bars and crackers. Lentil flour can be used on its own or in combination with other flours to give a characteristic mild nutty flavor. It is often used in gluten-free recipes to boost fiber content. Lentils can be incorporated into bakery products in the form of purée or flour.

    Lentils are among the most protein-rich of pulses, typically containing around 25-30% of their weight in protein. They are also rich in complex carbohydrates, including soluble and insoluble fiber. They are a source of B-complex vitamins (B1, B5 and folic acid) and minerals such as iron, calcium, potassium, phosphorus, magnesium, copper, manganese and zinc.
