Savory Pizza Crust

Ingredients

  • 100 % Flour all purpose
  • 65 % Water
  • 30 % Savory Pizza Grain Blend (RD-0782)
  • 2.25 % Dry yeast
  • 5.40 % Sugar
  • 5.85 % Canola oil
  • 2.48 % Salt
  • 0.25 % Softerning enzyme (as required)

Instructions

  • Hobart mixer, 2 minutes on low, followed by 7 minutes on fast - or until full development
  • Dough temperature to reach 25ºC / 78ºF
  • Floor time: 5 minutes
  • Divide at 235g and shape into boules
  • Let rest 5 minutes
  • Flattren to 20-25 cm diameter on corn semolina
  • Proof for 15 minutes
  • Bake at 425ºF non convection for 17 minutes
