Gluten-free muffins

Ingredients

  • 50 lb Gluten-free Muffin mix (RD-0875G)
  • 11 lb Eggs whole
  • 13.75 lb Milk liquid
  • 8 lb Vegetable oil

Instructions

  • Mix all ingredients together for 1 minute on low
  • Mix on medium for an additional 3 minutes
  • Bake at 375ºF / 190ºC for approximately 20 minutes for avewrage sized muffins (60g-1/4 cup batter)

Gluten-free Cookies

Ingredients

  • 50 lb Gluten-free Muffin mix (RD-0875G)
  • 13.25 lb Butter semi-salt
  • 5.5 lb Eggs whole
  • 1.75 lb Water

Instructions

  • Blend the dry mix and butter until it forms pea sized pieces.
  • Add eggs and water and mix on low for 1 minute
  • Scoop balls onto baking sheet
  • Bake at 350ºF / 175ºC for approximately 20 minutes for mid-sized soft cookies
