Morning Sun Rounds

Ingredients

  • 100 % Flour all-purpose
  • 84 % Water
  • 50 % Multigrain and Seeds Morning Sun Base (RD-0809)
  • 1.5 % Dry yeast
  • 2 % Canola oil
  • .25 % Fresh enzyme

After dough development

  • 25 % Dried raisins (to be soaked)
  • 5 % Soaking Water (absorbed)

Instructions

  • Soak the raisins four hours
  • Hobart mixer, 2 minutes on low and then 6 minutes on fast, or until full development
  • Add the raisins and mix and additional 1 minute on low
  • Dough temperature should reach 25ºC / 78ºF
  • Floor time: 5 minutes
  • Scales into boules of 100g each
  • Sheet dough to approximately 10mm thick and die cut 12 cm diameter
  • Weight should be 75-80g
  • Dock the rounds if desired (Ozery's are not)
  • Proof for 30 minutes
  • Bake at 400F for 15 minutes, non convection
