Teff is an ancient grain and is the main source of nutrition for more than two-thirds of Ethiopians, who consume it as a tasty pancake. Having previously been largely unknown outside of Ethiopia, India and Australia, it is now popular worldwide with its mild flavor reminiscent of molasses and its versatility. It can be cooked as porridge, added to bakery products or even turned into “polenta teff”.
Teff contains more than twice the iron content of other cereals and three times more calcium.
