Ingredients

Levian

  • 100 % Flour - Occident (bag)
  • 80 % Water
  • 40 % Gluten
  • 4 % Yeast - SAF instant

Other

  • 100 % Flour - Occident bag
  • 68 % Protein Plus Blend (RD-0870)
  • 88 % Water
  • 17 % Honey - DDA Wildflower Honey
  • 3 % Salt All-purpose
  • 1 % Yeast - SAF instant
  • 1 % Vitamin C Blend
  • 31 % Levian

Instructions

  • Mix all ingredients for 5 minutes at first speed
  • Then mix for 8-10 minutes on second speed
  • Note dough temperature and time on production sheet
  • Set into plastic tubs and ferment 1-2 hours depending on temperature
  • Scale at 24ozs - lightly round and rest 30 minutes before forming
  • Form into Pan loaf - using a wet towel method apply 3 seed Blend (353450)
