Organic Sprouted Grain Bread

Ingredients

  • 75 % All purpose flour
  • 25 % Organic sprouted grain blend (RD-0891)
  • 67 % Water
  • 1 % Dry yeast
  • 4 % Sugar
  • 4 % Canola oil
  • .25 % Softening enzyme (as required)
  • 2 % Salt
  • .5 % Dough improver (as needed)

Instructions

  • Hobart mixer, 2 minutes on low & 5 minutes on fast (or until full development)
  • Dough temperature at 25ºC / 78ºF
  • Floor time: 5 minutes
  • Divide at 530g, shape in boules and let rest for 5 minutes
  • Shape into a cylinder form and place into a regular bread pan
  • Sprinkle topping of choice, if desired
  • Proof for 60 minutes
  • Bake at 425ºF for 25 minutes, non convection
