Green Lentils

The lentil (Lens culinaris or Lens esculenta) is an edible legume and the oldest pulse crop known. Canada is now the world’s largest exporter of lentils to the global marketplace, selling to over 100 countries every year. The most commonly grown lentils are the large green and red lentils.
Lentil flour can be used in nutrition bars or bakery goods with the added benefit of twice the amount of protein than other cereal grains.
Lentils are an excellent natural source of folate and manganese and they also contain potassium, calcium and magnesium.
