Sweet Lupin

The seeds of lupine or lupini are the seeds of yellow legumes of the genus Lupinus. They are traditionally eaten in marinated form mainly in the Mediterranean and in Latin America. Australian Sweet Lupins (L. angustifolius) have no bitter taste and are used for different foods like lupine flakes, vegan sausages, lupine tofu and lupine flour. Because lupine seeds contain the full range of essential amino acids and, unlike soybeans, they can be grown in more temperate to cooler climates, lupins are increasingly recognized as an alternative to cash crops soy.
