Millet

Millet is a cereal and staple food for a third of the world’s population (Asia, Africa, China and Russia). Millet has a mild flavor and is often mixed with other cereals as is or roasted (grain or flour) to bring out its delicate flavor. Its tiny grain can be white, grey, yellow or red, and is rich in vitamins of group B (like all cereals) and minerals: manganese, zinc, magnesium, phosphorus, iron but also silica.
