Corn

Native to Central America, it is consumed worldwide as a cereal and vegetable. It is widely grown as a cereal and as a fodder plant and its global production even exceeds that of wheat and rice.
The most commonly consumed corn has yellow, white or yellow and white grains, but there are also older varieties of blue or purple corn. It is the corn grain which is used for the production of flour, semolina, oil, cornstarch and corn syrup.

Research at Cornell shows that corn has the highest levels of antioxidants in all grains and vegetables. It also contains phosphorus, magnesium, manganese and iron.
