Teff is native to Ethiopia and is the main source of nutrition for over two-thirds of the population there, and is also a dietary staple in India and Australia.
Part of the millet cereal grain family, teff is considered an ancient grain. Over thousands of years, it has undergone minimal changes through selective breeding, and so is still essentially the same grain that was consumed by our ancestors.

Teff flour can replace up to 25% of the wheat flour in baking recipes that contain baking powder, including muffins and pancakes. Brown teff has an earthy aroma and hazelnut taste, while ivory teff is lighter and slightly sweeter in flavor.
Ivory teff flour is ideal for preparing all types of fine pastries. It can also be used to make pancakes and waffles, as long as it is used in combination with buckwheat flour.
Given its rich color, brown teff flour is an excellent choice for cacao- or mocha-inspired recipes, as well as in cookies, chocolate cakes and brownies.
Teff is a cereal rich in complex carbohydrates, including resistant starch. It also contains high amounts of protein, fiber, iron, magnesium and zinc.
