Quinoa has a pronounced nutty flavor. It can be used in whole grain or flaked form as a garnish or an ingredient in baked goods. As a flour, it has many applications, appearing in breads, scones, cookies, muffins and more. Quinoa can replace 5 to 30% of the wheat flour in a recipe without drastically altering the final product. However, as the percentage of quinoa increases in baked goods, the ensuing volume decreases, resulting in a denser texture, darker color and different taste.
