Chia is recognized as an ancient grain. Over thousands of years, it has undergone minimal changes through selective breeding, and so is still essentially the same grain that was consumed by our ancestors.

Chia is a perfect complement to gluten-free, vegetarian and vegan recipes. It works well as a binding agent and can be used to replace eggs. Milled into flour, chia is a good choice for cakes, brownies and other less-textured pastries. Chia does tend, however, to create a darker, richer product, so we recommend not exceeding a substitution ratio of 10%.
