Sorghum

Sorghum is an ancient grain and has been a staple food for centuries in Africa and Asia. Around half of the world’s sorghum is meant for human consumption, but in the United States most crops are for feed. It can be eaten in various ways, such as soups, flour for bakery products or even to make beer. Sorghum flour contains starch, protein and dietary fiber that contribute to satiety. It is also rich in minerals such as iron, calcium and phosphorus.
